Health Canada's Position on Gluten-Free Claims
The words "gluten-free" in Canada now have a definition, according to Health Canada, the department of the government of Canada with responsibility for national public health.
The statement, released in June of 2012, follows the Codex Alimentarius Standard for Foods for Special Dietary Use for Persons Intolerant to Gluten (
Codex Stan 118-1979) at 20 ppm.
