Potential Risk Exposure

The Food and Drug Administration has an extensive procedure with multiple requirements prior to setting a regulation. Before the reopening of the public comments on gluten-free labeling, a hazard assessment was required with a review of research to determine the tolerable daily intake level for gluten in individuals with celiac disease. According to the FDA Hazard Assessment, “the tolerable daily intake level for gluten in individuals with celiac disease was determined to be 0.4 mg gluten/day for adverse morphological effects and 0.015 mg gluten/day for adverse clinical effects.” *
So what is the potential for consuming gluten on a daily basis? To answer this question, the Celiac Sprue Association office staff reviewed a typical daily menu. The chart below summarizes the serving size and calculations for consumption of gluten in one day.
